Safety factors ref: Public node vs Bitcoin Core Node

Just bought Coldcard Mk4 and am installing Sparrow Wallet. The installation instructions for Sparrow mention three ways to connect to connect to the Bitcoin network: Public Server, Bitcoin Core Node, Private Electrum Server. For now, I do not wish to run my own full node (not sure my ISP will permit the traffic). My understanding that a Core Node provides more privacy than a Public Server, what can I do to ensure the most security using a Bitcoin Core Node? I am using a VPN. I can always use new addresses for each transaction. Any other precaution???

BTW, when using a Ledger device and Ledger Live, how does L-Live connect to the network? A server owned by Ledger? How abut a CEX like Kraken? Do they run their own node??

TIA!
