Trading Pair Question

If I pick a day during the 2021 bullrun where the trading pair of two alts spikes abnormally high, Im confused about how swapping affects value.

For example: on one day we get a spike and AltA/AltB = 60 (normally say around 1). So one AltA coin is worth 60 AltB coins. On that same day according to historic data, AltA was trading at $20usd and AltB was trading at $3usd.

If I had 1000 AltA coins at the time, I could have sold for $20,000usd. Could I have instead swapped for 60k AltB coins, and sold the AltB for $180,000usd? I assume I'm missing an important step, like maybe no liquidity of AltA? Or the exchange somehow prevents this? Thanks in advance.
