When I sent BTC to my Trezor one, I noticed I've been hitting fresh address whenever I go to get the address. Is this better than using the same one?

I think there is a slightly correction here. The public addresses are not generated from the same private key, and they don't point to the same address.

Rather, for BTC the Trezor and other hardware and software wallets use deterministic algorithms to generate unique but related public/private key pairs. Each public key you generate on your Trezor points to a single (not technically, but simplified here) private key. The 24-word seed phrase tells the wallet which public/private keys to generate in which order for receives and change from spends, but they don't go to the same address. They go to the same wallet (which can hold any number of relates or non-related addresses).

The answer for which is best is, for Bitcoin, the best practice is to NEVER re-use key pairs. Every time you get Bitcoin, generate a new address. Every time you spend Bitcoin, use a new change address to deposit your balance. Re-using addresses compromises privacy/pseudonymity, and I think there are edge cases where re-using addresses makes it more possible (but still unlikely) to determine a private key address.
