Why don't more places use sats instead of calculating things in whole coins.

I just bought $20 worth of Bitcoin which is 31,027 sats. Swan displays it as ₿0.0003127 which is the more widely accepted format. But wouldn't it help adoption if all exchanges displayed sats as the initial valuation metric? Also there's no symbol for sats. Do you think at this point at least we should have a symbol for sats?
