Can you find every coin associated with a wallet armed only with the seed phrase?

I started messing around in the space in 2017 (after looking into it way back in 2013 and it too complicated to figure out how to buy and giving up, saying "I'll figure it out later" (sigh). I dabbled a bit, mainly using Coinbase - picked up small amounts of BTC, ETH, LTC and I think some XRP. I watched the crazy top happen and then the crazy crash, and then I noticed all of the altcoin pump and dumps and thought it would be fun to try to do a little trading and catch some pumps, so I opened accounts in Binance, Bitflyer, and some even more random CEXs like Yobit to get access to the really shitty shitcoins .

I had no idea what I was doing, and unsurprisingly quickly turned my small investment into an even smaller one, but it was a learning experience and I decided from then on I'd pick some coins that make sense, invest in them over time, and take the long view.

I still had a bunch of different coins, and I sent them all to a Ledger. I didn't use best practices in storing my seed phrases, so I created a new walled and new seed phrase and I think I sent all of my various coins to it - at least those supported by Ledger. Over the last year I started paying more attention and making some more investments, and decided to get the latest Ledger. Then I wanted to start getting involved in defi and though the Safepal may make that easier, so I created yet another wallet. So now I have a number of seed phrases and I'm not at all confident that my current wallets have all of the coins I invested in. My long-winded question is: armed only with a seed phrase, am I able to restore the various wallets on a new hardware wallet (or I guess I could just use Metamask for this) and confirm that I do in fact have every currency/coin I've purchased accounted for, without downloading every app onto the wallet ? If hardware wallets themselves can't do that, how about something like Koinly? For projects that weren't supported by my hardware wallets when I moved everything off of the CEXes I have the project-specific wallets and I'm pretty sure I kept track of them.
