Millions of people everyday use an app in their phone for banking to access their life savings and make transfers, paypal, etc. Generally speaking apps use sandboxing, which is a software architecture feature to isolate your information and keep your data secure. Some mobile wallets, such as blue or green, are quite secure. For extra security you can uninstall the app after you have written down the seed words and some addresses. Verify that you can delete and recover a wallet. Then you are ready to completely uninstall the app in your phone so that your seed words won't be there anymore. I do this all the time and it is safe. You can install the app again and restore your wallet in the future. You don't need to keep the app installed in your phone to transfer BTC from the exchange. That's why you write down some addresses to use, and you can check the balance directly in the blockchain. If you feel uncomfortable about generating the seeds on a phone, once again, a good open source app uses sandboxing, which isolates your wallet, but if it makes you feel better, you could turn the flight mode on, so that your phone is completely offline when you generate your seeds. HW wallets are good too of course, but one thing that I don't like of many HW is that you have to give the company very sensitive personal details (home address, name, etc.) and that's not good. The fact that the Ledger database was leaked is worrisome. In theory, someone knows your name and home address and knows that you use a ledger... at home. Anyways, hard or soft wallets both are good.
