When is the best time to do transactions paying less gas fees?

I would like to know how you people deal with gas fees in certain transactions. I am afraid to post here on this sub because everytime I did, it got deleted because of usage of certain coin names. I assume you understand which crypto currency I mean with the high gas fees :D.

Is it good to track the gas fees ( gwei) on etherscan to do it as soon as the fees are low ?

I would like to do a transaction but the fees oh deer those fees.
