Desktop wallet with specific feature? (double spend)

I have an unconfirmed transaction that is over a month old because I used a pretty low fee.

At this point, I'd love to re-write that transaction to add a few more UTXO & send to a different output address.

I couldn't figure out how to do this in Electrum or Sparrow.

Does anyone know of a wallet which let's me spend UTXO which haven't been confirmed? Electrum hides these UTXO from me in the "Coins" tab, so I can't freeze or select them.
